First, crack eggs into a bowl, then add black pepper, garlic salt, and garlic powder. Whisk.

Next, turn on stove to medium heat and drizzle olive oil into pan, then add minced garlic.

When the garlic is cooked, add cut up sun-dried tomatoes to pan and cook.

When sun-dried tomatoes are cooked, remove from heat and add spinach to pan. You don't want to cook the spinach but just heat it up.

This is what it should look like. Not too dark; not too light. Then place it on a plate to the side.

Next, place pan back onto stove and cook the whisked eggs. When the eggs are starting to form, add thin slices of mozzarella.

When the mozzarella is starting to melt, add the spinach, garlic, and sun-dried tomatoes on top of the cheese and fold the omelet.

This is what it should look like at the end. I added a bit more spinach before folding because I love spinach, but that's completely optional. Enjoy!
